3 apples, cored and sliced
3 handfuls of brambles
2 tablespoons of demerara sugar
1 teaspoon cinnamon
3 handfuls of oats – whizzed up in the food processor
1 handful of hazelnuts – whizzed up in a spice/coffee grinder
1 dessert spoon of coconut oil
- Stir up all the filling ingredients and smoosh the fruit down to release the juices (if you feel you need to add a splash of water here, feel free). Put it on the hob in a deep frying pan and cook down until the fruit is soft.
- Put all the crumble ingredients in a bowl and rub together with your fingertips until the oils are mixed through and it somewhat resembles bread crumbles.
- Pour the fruit filling into a pie dish and spread the crumble over top. Pop in the oven for about 20 mins at 200°C, or until the top is golden and the fruit is bubbling up at the sides.
- Serve with soya yoghurt or cashew ice cream, and if there’s any leftovers eat it for breakfast!
